Ingredients:
1-3/4 c all-purpose flour
1/2 c sugar
3 tsp baking powder
1 tsp ground cinnamon
1/2 tsp salt
1/2 tsp ground nutmeg
1 egg
1/2 c milk
1/2 c cooked or canned pumpkin
1/3 c vegetable oil
1 package (3 oz) cream cheese, cut into 12 cubes
STREUSEL:
1/4 c packed brown sugar
1/2 tsp ground cinnamon
1 tbsp cold butter or margarine
1/4 c finely chopped nuts
Directions:
In a large bowl, combine the flour, sugar, baking powder, cinnamon, salt and nutmeg. In another bowl, beat the egg, milk, pumpkin and oil. Stir in dry ingredients just until moistened. Fill greased or paper-lined muffin cups one-fourth full. Place one cream cheese cube in the center of each muffin cup; top with remaining batter. In a bowl, combine brown sugar and cinnamon; cut in butter until mixture resembles coarse crumbs. Add nuts. Sprinkle over batter. Bake at 400 degrees for 18-22 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

- Ingredients:
- 2 cups flour
- 2 cups milk
- 5 eggs
- Touch of salt
- Touch of sugar
Directions:
In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk, stirring to combine. Add the salt and sugar; beat until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.

- Ingredients:
- 1/2 cup rolled oats
- 3/4 cup skim or almond milk
- 2 tsp honey
- 1 tbsp toasted coconut
- 1/2 cup raspberries
Directions:
Mix Oatmeal with milk and microwave according to package directions. Top With honey and coconut and serve with berries.

Deep Dish Pie Crust
3 beaten eggs
1 and 1/2 cups milk
1/4 cup onion
1/4 tsp salt
1/4 tsp pepper
3/4 c ham, bacon, sausage or crabmeat
3/4 c spinach
- 1 and 1/2 cups swiss, cheddar or mozzarella cheese
- 1 tbsp flour
Directions:
Preheat oven to 350 degrees F (175 degrees C).
Place meat in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
In a large bowl, combine all ingredients and stir well.
Prick holes in a pie crust with a fork and pour mixture into pie crust.
Bake for 45 to 60 minutes, or until toothpick comes out clean.
Let stand 10 minutes before serving.

Ingredients:
3/4 cup Dannon fit and light vanilla yogurt
1/2 cup granola
1/2 cup Dole frozen mixed fruit
Directions:
Layer the bottom of a cup or bowl with yogurt. Sprinkle with granola and top with fruit.
