Harry Boy’s Pizza Burgers

Ingredients

1 lb ground beef
½ can tomato soup
1 c ketchup
½ tsp oregano
Salt and pepper to taste
1 lb shredded cheddar cheese
1 package hamburger buns

Directions

Cook ground beef and drain fat.  Break it up into fine chunks and cool in refrigerator.  Mix all ingredients except buns and top the buns with it.   Bake at 350 for 10-15 minutes

 

 

Bethie’s Turkey Rollups

 Ingredients

1 lb of Turkey from deli (cut 1/8 to 1/4 thick) - or you can use Roast Beef
1 box of herb stuffing mix
1 jar of turkey gravy (or beef gravy for roast beef) 
 
Directions

Prepare stuffing mix according to directions on the box.   Take one slice of turkey - put spoonful of stuffing on slice and roll up. Place roll side down in casserole dish.  Continue placing stuffing on top of turkey and roll up until all used.  Pour gravy over turkey rolls.  Salt and pepper to taste.
Put in 350 degree oven for 20 minutes or until warmed thru. 
 
Roast Beef slices and beef gravy can also be used.

Sugar Snap Peas

Ingredients

1 pound fresh sugar snap peas
2 tablespoons water
1 (2 ounce) jar sliced pimentos, drained
2 tablespoons butter, melted
1 teaspoon dried basil
1/4 teaspoon salt
1/8 teaspoon pepper

Directions

  1. In a large microwave-safe bowl, combine the peas and water. Cover and cook on high for 3-5 minutes or until crisp-tender; drain. Stir in the remaining ingredients.

Cornbread

Ingredients:

1 1/3 c buttermilk
1/4 c Vegetable Oil
2 c Corn Meal Mix
butter

Directions:

Heat oven to 450 and coat a 8 or 9 inch oven proof skillet with butter or crisco.  Place skillet in oven for 7-8 minutes or until hot.

Stir buttermilk, oil and corn meal mix until smooth.  Batter should be creamy and pourable.  Pour into prepared skillet.

Bake for 20-25 minutes or until golden brown

Shrimp Alfredo with Angel Hair Pasta

Ingredients:

16 oz. Classico®  Creamy Alfredo Pasta Sauce
1 (16 ounce) package angel hair pasta
2 pound(s) fresh shrimp, peeled and deveined
1 cup(s) butter, melted
1/2 small green bell pepper, diced
1/2 small red onion, finely chopped
1 teaspoon(s) garlic powder
1/2 teaspoon(s) ground cumin

Directions:

1. In a saucepan over low-temperature, heat the Alfredo sauce. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 minutes or until al dente; drain.

2. Boil shrimp in a large pot of water until they turn orange. Then place in bowl with melted butter. Let shrimp marinate for 15 to 30 minutes; remove. In a large skillet over medium heat, saute the green pepper and onion in a small amount of oil.

3. Mix together the cooked pasta, shrimp, pepper-onion mixture and Alfredo sauce. Season with garlic powder and cumin.
